Dessert, pastries and sweets

Dessert is just as important as the main course in Azerbaijan, and, in most cases, wildly sugary and calorific. Almost always consumed with a çay (tea), the most popular sweets include paxlava, a multi-layered, diamond-shaped pastry filled with sugar, nuts and honey; şəkərbura, a crescent-shaped pastry filled with ground nuts, sugar, honey and a touch of cardamom and fresh fruit like watermelon and figs, although you won’t always find fruit on the menu.

Pastries are particularly popular during Novruz, the coming of spring and the country’s main national holiday. You might find cake on menus, but it’s not popular with locals, unless it’s at a wedding or a special celebration. If you don’t have much of a sweet tooth, opt for a non-savoury pastry like şorgogal, an aromatic bun with caraway seeds. Some restaurants also offer halva, but Baku halva is very different to the solidified, nutty kind of the Middle East. Here, it’s almost like caramel, with a runny, sugary texture.
